Royal Foxtail Millet Payasam
A decadent, traditional Indian festive pudding naturally sweetened with jaggery and rich in ancient grains.
Ingredients
- 1/2 cup HANUSIRI Foxtail Millet
- 2 cups full-fat milk
- 1/2 cup organic jaggery powder
- 2 tbsp organic ghee
- 1/4 tsp cardamom powder
- Few strands of saffron soaked in warm milk
- Toasted California Almonds and cashews for garnish

Step-by-Step Instructions
Step 1
Heat 1 tbsp of ghee in a pan and lightly roast the foxtail millet for 2 minutes until aromatic.
Step 2
Add milk to the roasted millet and cook on a low flame until the millet is completely soft and the milk thickens (about 20 mins).
Step 3
In a separate pan, melt the jaggery with a splash of water to make a syrup. Strain it to remove impurities.
Step 4
Turn off the heat under the cooked millet, allow it to cool slightly, and stir in the jaggery syrup (adding jaggery to boiling milk can curdle it).
Step 5
Stir in the saffron milk, cardamom powder, and remaining ghee. Garnish with toasted nuts and serve warm or chilled.
