
Heritage Temple Puliyogare
The iconic South Indian Tamarind Rice, elevated by the deep, nutty flavor of pure cold-pressed sesame oil.
Ingredients
- 2 cups cooked rice (cooled and grains separated)
- 3 tbsp HANUSIRI Wood-Pressed Sesame Oil (Gingelly Oil)
- 3 tbsp readymade Puliyogare (Tamarind Rice) paste
- 1/4 cup roasted peanuts
- 1 tsp mustard seeds
- 1 sprig fresh curry leaves
- 2 dried red chilies
Step-by-Step Instructions
Step 1
Spread the cooked rice on a wide plate. Drizzle 1 tbsp of raw wood-pressed sesame oil over it and mix gently. This keeps grains separate and adds authentic flavor.
Step 2
In a wide pan, heat the remaining 2 tbsp of sesame oil. Add mustard seeds and let them splutter.
Step 3
Add dried red chilies, curry leaves, and roasted peanuts. Sauté for 30 seconds.
Step 4
Add the Puliyogare paste and cook on low heat for 2 minutes until the oil separates slightly from the paste.
Step 5
Turn off the heat. Add the cooled rice to the pan and gently toss until every grain is evenly coated in the tangy, spicy mixture.
Step 6
Serve with fried papad for a perfect traditional meal.
